Snickering Chocolate Treats

Homemade chocolates anyone? 
​

Ingredients:
  • dates (seed removed)
  • dark chocolate
  • coconut oil
  • almonds
  • peanut or other nut (optional)



​Instructions:
  1. Remove the date seed, if there is one.
  2. Roast almonds & put one inside each date.
  3. Place on parchment or silicone sheet & freeze for a couple hours of overnight
  4. Dip in melted dark chocolate (double boiler as we don't own a microwave) and a tsp of coconut oil. 
  5. Take dates filled with almond & drop into chocolate.
  6. Do the same until all the dates are covered.
  7. Place your tray of chocolaty goodness back into the fridge or freezer until solid.​

Keep cool until ready to eat Enjoy & share!!!

The BEST Seitan Pepperoni

Ingredients
  • 1 1/2 cups vital wheat gluten  
  • 1/3 cup tomato paste
  • 1/3 cup soy sauce
  • 1/4 cup coconut oil, cooled so that it's solid
  • 1/4 cup water
  • 1 tablespoon whole fennel seeds
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 2 teaspoons crushed red pepper flakes (reduce or omit for less spice)

Instructions
  1.  Add several inches of water to a large pot with a steamer basket and bring to a boil
  2. Mix together the dry in a bowl & mix together the wet.  Now add EVERYTHING  together.
  3. Once the mixture starts to come together, finish by hand, kneading the dough for 2 - 3 minutes to make sure it's combined well. Kneading the seitan will also give the vegan pepperoni a chewier texture
  4. Divide the dough into 4 pieces then roll the dough pieces into 4 logs. Roll each log up loosely in a piece of aluminum foil then twist the ends closed. If you have it,  roll the dough in parchment paper before aluminum. 
  5. Steam for 30 minutes. Oil may release during steaming and appear in the steamer basket and water.
  6. ​After 30 minutes, remove the logs from the steamer and allow to cool completely in the fridge. The logs will have puffed up in the foil and become tight. Once cooled, remove the foil and they are ready to slice and enjoy as you like.

Keep airtight in the fridge & will last up to 2 weeks. If you decide to freeze the pep? Please let me know how it works out.

GUACAMOLE

​INGREDIENTS
  • 2 - 3 medium ripe avocados. peeled & chopped
  • 1 medium ripe tomato, seeded & diced
  • 1/4 cup onion, finely diced
  • 1/4 cup jalapeno,  chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 limes, squeezed and juice reserved
  • 1/2 tsp salt

DIRECTIONS
  1. Peel & chop avocados, tomato, onion, jalapeno & fresh cilantro.
  2. Add lime juice & salt.
  3. Mix well. 
Keep avocado pit back into guacamole to keep well.

One Pan Mexican Quinoa

INGREDIENTS 
  • 2 1/4 cup water
  • 1 1/2 cup quinoa
  • 15 oz diced tomatoes with jalapenos or fire roasted diced tomatoes . 
  • 15 oz can black beans rinsed
  • 15 oz can corn
  • 1 TB Lime Juice
Spices to taste:
  • 1/ 2 tsp chilli powder
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1/4 tsp garlic
  • 1/4 tsp cayenne pepper
  • 1 tbsp chopped cilantro
DIRECTIONS
  1. Add quinoa, water & tomatoes to a medium skillet or sauce pan. 
  2. Bring liquid to a boil & reduce heat to summer on medium low for 12-18 mins. (quinoa pops when done)
  3. Stir in black beans, corn, lime & spices
  4. Spoon into bowls & serve warm with guacamole, salsa, cheeze etc.

Store leftovers in fridge for up to 5 days.
Serve warm or cool.
